Seriously! Enough already. It’s the last day of summer and I can’t let it go!!!!
I was at the farmers market today and had to pick up my favorites.
This is the best of summer farmers market produce… buy a squash, zucchini and tomato.
It’s a supper easy dish!
Preheat the oven to 375. Use a little olive oil to grease the bottom and sides of a Corningware dish. Use a mandoline and slice 1 zucchini, then one summer squash and one tomato do the same steeps again making 2 layers. On the top use small chunks of butter, parmesan cheese, breadcrumbs, and planko crumbs. Cover and bake in the oven for 45 minutes till it starts to bubble. Take the cover off and bake for another 15 minutes. Serve over rice or add a protein.
