Kumquats! I kind of just like saying that word.
I saw these cute little guys in the grocery store last week. I’ve never had them before but I couldn’t pass them by. Just the color alone made me feel so happy! When I got home I had no idea what to do with them. They were just staring at me every morning in the fridge… so I thought ice cubes! I’ve been trying to come up with different ingredients for my usual vodka soda and this would be a perfect addition.

Super easy to do:
I bought the ice cube trays on Amazon. Just search “silicone ice cube tray large”.
Wash the kumquats and set a few aside. Drop 1 into each compartment. You can just add water because just the fruit itself has a really nice citrusy sent. I like to squash/zest a few of them and add the juice to the water before pouring it into the mold. I also wanted something a little earthy so I added thyme as well. You can add any herb you have in your fridge or garden.

I like that the fruit floats to the top of the cube. But if you’d preferred it to be frozen in the center of the ice cube then fill half way and freeze then add more water and freeze again. Because the molds are silicone it’s really easy to pop the cubes out.

If your not ready to use the ice cubes and would like to store them longer then pop the cubes out on a cookie sheet lined with parchment paper. This will keep the cubes from sticking together. Freeze another 15 minutes then toss them quickly in a ziplock bag and use them one at a time.
