As a kid I never remember liking pumpkin seeds, but after the gooey mess of cleaning the pumpkin out it was always fun to roast them!
This year with my kids I did sweet and salty both super easy recipes.
-After rinsing the pumpkin seeds leave them in a colander overnight to dry.
-if you want to bake them right away spread them out on paper towels and they will dry in about 15 minutes.
Turn your oven onto 375
-Infused olive oil (I use basil)
Spread the seeds out on a baking sheet and lightly drizzle with oil salt to taste
-2 tablespoons of butter
-2 teaspoons of vanilla extract
– cinnamon sugar
Spread the seeds on the baking sheet. Warm the butter in the microwave for about 30 seconds add the vanilla extract to it. Pour over the sears and sprinkle with cinnamon sugar.
Bake for about 28 minutes turning he seeds every 7 minutes. If you like them crunchy broil them for 1 min on each side at the very end.
