Yes I add this much spinach to this dish! It just wilts to almost nothing when tucked into heated quinoa.

This is one of my favorite healthy weekend dishes to make. It’s great post hangover because it gives you the right amount of protein + carbs. The bacon adds a salty and fatty part to the meal that I crave after a night of drinking 😉
Now that January is almost over I find it harder to stay on track with healthy eating. That’s why I love this recipe its healthy and satisfies my cravings.

1/4 cup cooked quinoa
2 cups of spinach
1/2 alvacado
2 tablespoons of bacon crumbs
2 poached eggs
2 tablespoons of your fav cheese (I use feta)
